    • 8 ounces cream cheese, softened to room temperature
    • 2 large eggs, room temperature
    • 2 cups powdered sugar

Instructions

  1. Make the Crust:
    • In a large bowl, whisk together the gluten-free flour blend, granulated sugar, gluten-free baking powder, and salt.
    • In a separate bowl, whisk together the melted butter, egg, and vanilla extract.
    • Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix.
    • Press the dough evenly into the bottom of a greased 13x9-inch baking pan.
  2. Prepare the Filling:
    • In a large bowl, beat the softened cream cheese until smooth.
    • Add the eggs one at a time, beating well after each addition.
    • Gradually add the powdered sugar, beating until the mixture is smooth and creamy.
  3. Bake the Bars:
    • Pour the cream cheese filling evenly over the prepared crust.
    • Bake in a preheated oven at 325°F (165°C) for 40-45 minutes, or until the center is almost set and the edges are lightly golden brown.
    • Let the bars cool completely in the pan on a wire rack before cutting and serving.
  4. Serve:
    • Dust with additional powdered sugar, if desired.
    • Cut into bars and enjoy!

Tips and Variations:

  • Use a high-quality gluten-free flour blend for the best results.
  • Make sure all your ingredients are at room temperature for easier mixing.
  • For a richer flavor, use unsalted butter.
  • To add a touch of citrus, add a teaspoon of lemon or orange zest to the crust.
