The Recipe

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup gluten-free all-purpose flour (such as Petley Grain All Purpose Flour)

Instructions

    1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
    2. In a large bowl, whisk together the peanut butter, granulated sugar, brown sugar, egg, and vanilla extract until smooth.
    3. In a separate bowl, whisk together the baking soda, salt, and gluten-free flour.
    4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
    5. Drop by rounded tablespoons onto the prepared baking sheets, spacing them about 2 inches apart.
    6. Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
    7. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Tips: 

  • For extra flavor, add a pinch of cinnamon or nutmeg to the dough.
