Baking Up Love: Gluten-Free Red Velvet Cake

As Valentine’s Day approaches, love is in the air, and what better way to celebrate romance than with the indulgent delight of red velvet cake? This iconic dessert, known for its striking red hue and velvety texture, has become synonymous with love and special occasions, particularly on February 14th.

The Origins of Red Velvet Cake

Red velvet cake has a fascinating history that dates back to the early 20th century. Its unique color and flavor were originally attributed to reactions between cocoa powder and acidic ingredients like buttermilk and vinegar. Over time, the addition of red food coloring became popular, giving the cake its signature vibrant appearance. The rich, buttery cake is typically layered with cream cheese or buttercream frosting, making it a decadent treat for those who indulge.

A Symbol of Romance

The deep red of red velvet cake isn’t just visually stunning; it also symbolizes love and passion, making it the perfect dessert for Valentine’s Day. Sharing a slice of this cake with a loved one can turn an ordinary celebration into something extraordinary, creating sweet memories that linger long after the last bite.

Red Velvet Cake Recipe

This classic red velvet cake is moist, tender, and bursting with flavor. The vibrant red color is achieved with food coloring, but you can easily omit it for a more traditional chocolate cake.

Ingredients:

  • 2 cups gluten-free all purpose flour (such as Petley Grain All Purpose Flour)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

  • 2 Tablespoons unsweetened cocoa powder
  • 2 cups sugar
  • 1 cup vegetable oil or canola
  • 3 eggs
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1-2 oz. red food coloring more or less depending on how deep you want the color
  • 1/2 cup plain hot coffee prepared (don't skip this ingredient)
  • 1 teaspoon white distilled vinegar

Instructions:

  1. Preheat oven to 325 F.
  2. Generously grease and flour (2) 9-inch round cake pans. Set aside.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, cocoa powder, and salt. Set aside.
  4. In a large bowl, combine the sugar and vegetable oil.
  5. Mix in the eggs, buttermilk, vanilla, and red food coloring until combined.
  6. Stir in the coffee and white vinegar.
  7. Combine the wet ingredients with the dry ingredients a little at a time, mixing after each addition, just until combined. (Batter will be thin)
  8. Pour the batter evenly into each pan.
  9. Bake in the middle rack for 30-40 minutes or until a toothpick inserted in the center comes out with moist crumbs clinging to it. Do not overbake as the cake will continue to cook as it cools
  10. Let pans cool on a cooling rack until the pans are warm to the touch.
  11. Slide a knife or offset spatula around the inside of the pans to loosen the cake from the pan.
  12. Gently remove the cakes from the pan and let them finish cooling. (The warm cake will be very delicate)
  13. Frost the cake with cream cheese frosting when the cakes have cooled completely.

Cream Cheese Frosting

Ingredients:

  •  ½ cup butter - softened
  • 8 ounces cream cheese - softened
  • 2 teaspoons vanilla extract
  • 3 cups powdered sugar - sifted

Instructions:

  • In a medium-sized bowl, add your softened butter and cream cheese.½ cup butter,8 ounces cream cheese.
  • Using your electric whisk, beat for 2-3 minutes. Make sure to scrape down the sides halfway through!
  • Pour in vanilla extract and half of your powdered sugar.
  • Beat for another 2-3 minutes, scraping down the sides halfway through.
  • Add in remaining powdered sugar and beat well.
  • Frost your cake and enjoy (Let your cake cool slightly before frosting)

Notes:

  • Be sure to not overbake! Check the cake at 30 minutes as some ovens run really hot.
  • The cakes are really moist and delicate. You may need to refrigerate them to firm them up before stacking and frosting.
  • To bake cupcakes, bake for 18-20 minutes, checking at the 18-minute mark.
  • Gel food coloring is more concentrated than liquid, so you may only need 2-3 teaspoons.
  • If using liquid red food coloring, you'll likely need just over 2 tablespoons (about a 1-ounce container).
  • The food coloring is purely for visual appeal and does not affect the flavor. You can easily omit it for a classic chocolate cake.

This Valentine’s Day, let red velvet cake be the star of your celebration. Whether you buy it from a bakery or bake it from scratch, the rich flavor and vibrant color are sure to enchant your special someone.
