Carrot Cake

Blending can be done with a spoon, hand whisk or an electric mixer. Cakes are done when a toothpick inserted in the middle of the cake comes out clean.

Carrot cake:
Naturally White Cake Mix (16 oz.)
1 teaspoon of cinnamon
1/2 cup of oil
2 cups of shredded carrots
3 eggs
1/2 cup of chopped walnuts or pecans
Place these ingredients in a bowl.
Blend with a hand whisk or mixer
Pour into a well greased loaf pan
(8 1/2 by 4 1/2)
Preheat the oven to 325 F
Bake for 1 hour and 15 minutes
Drop out on wire rack, cool 1 hour before icing
Icing:
Mix 1/2 cup of cream cheese, 1/4 cup of butter
Slowly mix in 1 cup of powdered sugar
