Soda bread muffin

Option 1:
mix at room temperature
1 Teaspoon baking soda
2 cups of buttermilk
3 large eggs
Option 2:
mix at room temperature
1 Teaspoon baking soda
1 1/2 cups of milk, soy milk, or almond milk
3 tablespoons of apple cider vinegar
3 large eggs

Mixing is done by hand with a spoon. Spray a 8 or 9 inch round cake pan with nonstick spray and dust with 1 tablespoon of mix. Pour mix into a large bowl and blend in the baking soda. Add the buttermilk (or milk and vinegar) and eggs and stir till just mixed. Shape into a round flat shape in the cake pan and smooth top using a spoon with a teaspoon of water. Cut a cross in the top of the dough and place in preheated oven.  A non-stick muffin pan can also be used to make 12 soda bread muffins, simply apply non-stick spray then bake. Bake for 45 minutes at 400 F. Flip bread out of pan onto a rack to cool. To make raisin bread add 1 cup of raisins, and add 10 min. baking time. Store in the refrigerator.

Ingredients: whole grain sorghum flour, whole grain brown rice flour, potato starch, tapioca starch, whole grain millet flour, corn starch, evaporated cane juice, sea salt, pea fiber, xanthan gum, guar gum, citric acid.
