GLUTEN FREE PANCAKE MIX

Directions (3 regular waffles):

3/4 cup  of mix
1/4 to 1/2 c of buttermilk or other milk
1/2 cup of water
1 egg
1 tbsp canola oil
Cooking spray for waffle iron

Mix the dry ingredients, water and oil with a spoon or whisk. Let the batter sit for a few minutes then begin making waffles. Spray the waffle iron with cooking oil for each waffle. Use the high setting on the waffle iron and longer baking times. Bake until the waffle has browned and steam has slowed.

Directions for Pancakes:

Use medium heat, flip when bubbles form and edges are firm.

Ingredients: White rice flour, potato starch, brown rice flour,  cane sugar, aluminum free baking powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch, and monocalcium phosphate), pea fiber, sea salt, xanthan gum, guar gum.

Ingredients for NONGMO version: White rice flour, potato starch, brown rice flour, organic evaporated cane juice, aluminum free baking powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch, and monocalcium phosphate), potato fiber, sea salt, xanthan gum, guar gum.
