GLUTEN FREE WHOLE GRAIN BREAD MIX

GF Whole Grain Bread:
Package of GF bread mix (18 oz. rm. Temp.)
1 cup of very hot water
3/4 c. of milk (rm. temp.)
2¼ teaspoons of dry yeast
(1 package is about 2¼ teaspoons)
1 tbs. of canola oil or other oil
3 large eggs (rm. temp.)

Use a power mixer with regular beaters or mix by hand with a spoon. Pour one cup of mix into a large bowl and blend in hot water. Wait 10 minutes then mix in the yeast. Mix in the rest of the ingredients. (option: transfer to bread machine to make 1 1/2 lb loaf). Wait 30 minutes. Stir 3 minutes. Spray standard loaf pan with non-stick spray, spread in batter and smooth top with a teaspoon of water. Cover and let rise in a warm place for 30 to 40 minutes or until dough is just above the top of the pan. Uncover and bake for 1 hour at 375 F. Store in the refrigerator.

Also, Bread mix can be used as a substitute for all purpose flour (APF): 1 cup of APF equals 1 cup of bread mix plus 2 tablespoons liquid.
Ingredients: whole grain sorghum flour, whole grain brown rice flour, potato starch, tapioca starch, whole grain millet flour, corn starch, evaporated cane juice, sea salt, pea fiber, xanthan gum, guar gum, citric acid.
